I’ve been at home in Texas this week and have been getting my fix of all the foods I miss out on by being in North Dakota like good Mexican food, Chick-fil-a, more Mexican food, Pizza King, some good home cooking from my mom, and more Mexican food. I also had to get my fair share of Blue Bell ice cream. Needless to say I will be rolling back to North Dakota tomorrow! In between all of that it’s hard to believe that I’d be hungry again, but after taking a couple of walks throughout the day my stomach starts to rumble and so my mom introduced me to one of her favorite snacks. It’s high in protein, low in carbs, and gets you a serving of dairy and fruit. She mixed together some plain Greek yogurt, PB2 powder, and stevia and then cut up some apple slices.
PB2 powder is basically powdered peanuts that have had a significant amount of their fat removed making it a low fat, but high protein, food. It’s also lower in calories meaning it’s easy to mix into smoothies, yogurt, oatmeal, etc. to add some extra flavor and still keep your calories in check. This snack is a diabetic friendly snack because it is low carb and also just a good snack in general because it’s packed full of protein to help keep you feeling fuller longer. This snack is high in calcium from the yogurt and fiber from the apple. The next time you’re feeling a little peckish give this recipe a try!!
Mom’s Peanut Butter Dip
- 1/2 cup of plain Greek yogurt
- 1 heaping tsp of PB2 powder
- 1 drop (or one pinch) of stevia
- 1 sliced apple
- Mix together the yogurt, PB2, and stevia until well combined. Dip apple slices and enjoy!!! 🙂
