Happy Monday everyone! Before we get to talking about food, I just wanted to let you all know that here in North Dakota it is starting to feel and look a lot like fall and I just can’t believe it! It’s only the beginning of September and the trees are starting to look a little yellow and the air is beginning to get that nice crisp fall feel. Being a Texas girl I’m not used to this kind of weather until mid to late October/early November, so it’s a bit of a change for me. But on the bright side I can justify pulling out the fall decorations early this year! Okay, enough about the weather…let’s get on to the food!

I don’t know if it’s the change in the weather or the busier schedule from my classes starting back up that has me wanting to experiment with sandwiches. In all of this sandwich making I have discovered a new guilty pleasure. The BLT. For the longest time I wouldn’t touch them because of the tomatoes and mayonnaise. Well a few years ago I finally started to love tomatoes, but I still wouldn’t try the BLT because of the mayonnaise. I got over that one when I got over being scared of eating fat and boy am I sure glad I did because BLTs have changed my life.

I call BLTs one of my guilty pleasures because even though it does have the tomatoes and lettuce on it, it does still have bacon which is a processed meat that is generally high in saturated fat and sodium. Sadly I have yet to find a healthy alternative for bacon. Turkey bacon is no better for you than real bacon because it’s actually higher in sodium than real bacon despite having less fat. The mayonnaise  on the BLT is also high in fat.

Not all hope is lost for the BLT though! You can make a BLT a little more healthy by using a whole grain bread, piling on the lettuce and tomato, using about three to four slices of bacon, and adding a thin layer of mayonnaise rather than slathering it on. One recommendation I will make for the mayonnaise is to use real mayonnaise because light or low-fat mayonnaise is typically full of added sugar, sodium, and additional chemical fillers that aren’t necessarily better for you than the fat in the real mayonnaise.

For my BLT I used a suggestion to add a few additional flavors to my mayonnaise to give my sandwich a little more flavor. If your looking for a quick and filling sandwich for a quick lunch or a simple dinner check out my version of a BLT!

BLT

Ingredients:

  • 4 slices of cooked bacon
  • 2-3 slices of tomato
  • 2-4 lettuce leaves
  • 2 slices of bread of your choice – I used my homemade mock sourdough bread
  • 1/2 Tbs mayonnaise
  • 1/4 tsp finely chopped dill
  • 1/4 tsp finely chopped green onion
  • 1/8 tsp garlic powder
  • a pinch of salt and pepper

Directions:

  1. Toast bread in toaster. While bread is toasting, mix together mayonnaise, dill, green onion, garlic powder, salt and pepper.
  2. When toast is ready, spread mayonnaise on one or both pieces of toast and place lettuce, tomatoes, and bacon on one piece of toast and top with the second piece of toast. Enjoy!
