Hi everyone! I have seen poke bowls popping up in various places recently and thought I would give it a try. To me they are the Asian version of a taco bowl. Most of the time they are made with raw fish, however, raw fish just isn’t for me so I grilled my salmon. Poke bowls are full of antioxidant and fiber rich veggies, fish full of omega-3 fatty acids, and packed full of savory flavor. No wonder several people are talking about these.

The nice thing about this dish is that the sky’s the limit on what you want to put in it. Here is a basic guide to how to build your own poke bowl:

Poke Bowls:

Ingredients:

To make salmon:

  • 1 pound of salmon
  • 1/4 cup soysauce
  • 1 tsp rice wine vinegar
  • 1 tsp sesame oil
  • 1 tsp sriracha

To make sriracha sauce:

  • 2 Tbs sriracha
  • 3 Tbs plain greek yogurt

To build the bowl:

  • cauliflower rice (make it yourself or buy it premade)
  • edamame
  • shredded carrots
  • avocado
  • green onions

Directions:

  1. Marinate salmon for ~1 hour. On medium high heat, cook salmon on each side for 5-6 minutes per side, or until an internal temperature of 145 degrees F is reached.
  2. While salmon is cooking, mix together sriracha sauce.
  3. Once salmon is done cooking, shred salmon. Build your bowl however you wish and enjoy!
