Hi everyone! Spring time has been a little shy this year and is not wanting to come around. Here in North Dakota snow is still on the ground with several chances of snow remaining in the forecast for the next few weeks. I have been getting a little antsy because I’m used to this time of year being warm and full of beautiful Texas wildflowers. At least the days are getting longer now so it’s easier to get outside and take walks in the evening, despite the cold.

Usually I like to take a good 30-45 minute walk in the evenings which leaves me feeling hungry for a quick snack. One of my favorite snacks to have after a nice long walk is a granola bar. I particularly like to make my own granola bars because 1) I know what is going in them and 2) I can make them as big or as small as I want to. Usually granola bars from the store are a little more than I want and I end up eating half and saving the rest for later, but other times I will eat the whole thing because it’s there. By cutting the homemade granola bars myself I am able to use portion control and not over eat on my snacks.

Here are three different granola bar recipes that are all very simple and delicious! They are perfect snacks for after a workout, after work, at work, road trips, hiking or camping, or even for a quick breakfast! I hope you find a recipe that you like!

Peanut Butter Coconut Granola Bars

Ingredients:

  • 1 cup peanut butter
  • ½ cup honey
  • 2 ½ cups rice puff cereal
  • ½ cup shredded coconut

Directions:

  1. Over medium-low heat in a medium saucepan add the peanut butter and honey. Stir constantly until melted together – takes about 5 minutes.img_8446
  2. Remove from heat and add the rice puff cereal and stir to combined. Once combined, add the coconut and stir until combined.
  3. Pour mixture onto a baking sheet or cutting board. Using your hands, press mixture into a 9×12 inch rectangle. img_8444
  4. Place in refrigerator for ~15 minutes. Once cool, cut into squares of desired size and enjoy!img_8472.jpg

Chocolate Chip Granola Bar

Ingredients:

  • 1 1/4 cups of rice puff cereal
  • 1 cup quick oats
  • 3 Tbs ground flaxseed
  • 1/4 cup honey
  • 2 Tbs brown sugar
  • 1/3 cup peanut butter
  • 1 tsp vanilla extract
  • 1/4 cup chocolate chips

Directions:

  1. In a large mixing bowl, combine the rice puff cereal, quick oats, and flaxseed.img_8447
  2. Combine the honey and brown sugar in a saucepan and bring it to a boil over medium heat. Stir constantly.
  3. Remove from heat and stir in peanut butter and vanilla extract until blended.
  4. Pour peanut butter mixture over the oat mixture and stir until coated evenly.  Mixture will stiffen as it cools.
  5. Pour mixture onto a baking sheet or cutting board. Using your hands, press mixture into a 8×8 inch square. Sprinkle chocolate chips over the top of the square and press into the mixture.img_8448
  6. Place in refrigerator for ~10-15 minutes. Once cool, cut into squares of desired size and enjoy!img_8470.jpg

Mint Chocolate Chip Granola Bars

Ingredients:

  • 1 cup flour
  • 1 cup oats
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 Tbs ground flaxseed
  • 1/4 cup cocoa powder
  • 1/4 cup white sugar
  • 1/4 cup chocolate chips
  • 1/4 cup mint chips
  • 1 1/2 cup rice puff cereal
  • 2/3 cup milk
  • 1/4 cup honey
  • 1 egg
  • 1 tsp peppermint extract
  • 1 Tbs oil

Directions

  1. Preheat oven to 350 degrees F. In a large bowl, mix together the flour, oats, baking soda, salt, flaxseed, cocoa powder, and sugar. img_8449
  2. Add the chocolate and mint chips and rice puff cereal to the oat mixture and combine.img_8450
  3. In a separate bowl mix together the milk, honey, egg, peppermint extract, and oil. Add the liquid mixture to the dry and mix until combined.
  4. Spray a 9×13 baking dish with cooking spray. Pour mixture into baking dish and press mixture into the bottom of the dish. Bake for 12-15 minutes.img_8451.jpg
  5. Let the bars cool completely (~30 minutes) before cutting into squares of desired size and enjoy the minty goodness!img_8474
