I’m sure you’ve seen the recipes out there for cauliflower pizza crust, cauliflower rice, cauliflower mashed potatoes, and even using cauliflower in place of chicken for buffalo wings! I for one was nervous to try one of these cauliflower alternatives because I was afraid it wouldn’t turn out any good, but boy was I wrong! I have made all of the cauliflower alternatives I mentioned except for the pizza crust so I can’t vouch for that one, but as for the others they are superb!! The reason for this alternative for a lot of people is because they want a lower carb alternative or they just want to incorporate more veggies into their diet. Cauliflower is great because it is high in fiber and contains phytochemicals. Phytochemicals are a group of antioxidants that help reduce cancer risk and improve cardiovascular health.
Cauliflower rice actually takes less than half of the time to make than making real rice takes. All you need is a head of cauliflower and a food processor (I actually used a blender on the pulse setting because I couldn’t find my food processor) and voila! I made fish tacos the other night and made cilantro lime cauliflower rice to go with it. Here is my recipe for cilantro lime cauliflower rice! I hope you enjoy it as much as I did!
Cilantro Lime Cauliflower Rice
- 1 head of cauliflower
- 1 minced garlic clove
- 1 Tbs canola oil
- 1 tsp salt
- 1 tsp sugar
- 1 Tbs lime juice
- 1 tsp lemon juice
- 1 1/2 Tbs chopped cilantro
- Remove cauliflower leaves and chop cauliflower into florets. Place about half of cauliflower florets in food processor (or, in my case, a blender) and process until cauliflower resembles rice. Do the same to other half.
- On medium high heat, add oil to skillet. Add garlic and cook for about 1-2 minutes and then add cauliflower rice. Cook until slightly brown.
- Add remaining ingredients and cook for another 2-3 minutes to let flavors combine and enjoy!!
